The pan-bagnat, often incorrectly called “pain bagnat”, is a sandwich that is a speciality of Nice and composed of tuna, raw vegetables and olive oil. The pan-bagnat is basically a snack item carried by fishermen and other workers to work in the morning, and is made using simple, local and inexpensive ingredients.

Pissaladière, to enjoy when visiting the city
Pissaladière is a type of pizza or an onion tart for some. Bread dough and onions may be sufficient but the pissaladière is incomplete without pissalat, a type of paste or salted cream made from salted sardines and anchovies, which have also given this speciality dish its name.

Chard pie, something for the dessert…
The chard pie is a culinary speciality of Nice made from Swiss chard and served both as a savoury tart and a sweet dessert. Although chard is the main ingredient, this is a pastry and can be eaten hot or cold. This tart is often abundantly topped with icing sugar.
